60 day "Rock it Out" Challenge

OMGoddess...I got a Blog Inspiration Award!!! I am working on a post to announce it and to give it to five awesome bloggers...I'll post it tomorrow!!!!!!! Thanks beautiful Kristen !

I know this picture won't coincide with the "challenge" but hey eating is great! And I love raw food so that is a part of my challenge too! "Rock out the Raw Recipes! "

I am having a personal fitness challenge ...I told you in my last post. Here is the preliminary outline. I am soooooo excited about it. It's Sunday and I still have sundried flax crackers so I didn't and won't make any bread/crackers...but will probably throw on corn chips later b/c I ate the last of em today!

I had the ultimate fast food today...I went to Costco and I got fresh cut cold pineapple..yum. Talk about fast! I ran a few errands that I have been putting off. Feeling bloated from too many onion bread sandwiches, but loved every bite of em.

I made a key-lime cheesecake today. I promise to take pictures and post them tomorrow. I am getting so bad at doing that :( vow to get better though!

Today I did dreaded cardio again....ARGGG..just trying to balance out the 1/2 of cheesecake I ate!! hahahaha. I'm kidding, I had things on my mind and I don't train arms until tomorrow, so I needed to blow off some steam. Did 20 mins HIIT on the elliptical

So welcome to my "Rock it Out" Challenge. You can follow the recommended schedule that I will post daily or just rock it out in your own way!! I am going to be drinking TONS of green smoothies and that means trying new ones too!!! Like this morning.. yummy... I took a recommendation from the beautiful Raw Goddess Heathy .

1/2c almond mylk..... OMGoddess!! it was soooooooo good. I'll be having it again today!

Fitness Challenge Over

Hey everybody!! I am so sorry to be so sporadic, but I was in an 7-8 week fitness challenge and it's over today so I am back back back.

I am making a 60 day fitness challenge for myself and will keep you all totally updated about it. It starts in 5 days!!!

Oh my biceps look fabulous if I must say so myself!!

Here is my fitness inspiration...well one of them. I am going to list some of my workouts on here b/c I have heard that some people really like seeing them.

WEll so do others b/c someone stole my fitness notebook at the gym. I know I know..bad karma they will have!! I hope it was a cardio bunny who can benefit from picking up a dumbbell!!

I'm off to the gym in an hour for what I call Crazy Cardio and Abs! That's 20 min intervals on the dreaded treddy...20 min Elliptical...10 mins rbike and a host of crazy weighted abs in between. I do NOT like cardio at all and this week it will be my only one day doing it so I will rock it out.

Other than that, this week I've trained shoulders/back/bis/tris and of lovely legs!!!!!

So I am back and looking forward to diving back into my lovely world of raw friends! I missed it all - Glitter Graphics

I've been sooooo busy. I am in a fitness challenge right now and am focusing on doing my best. A personal family tragedy has had me down a bit. I flew to New Orleans and I feel better now, but things are still a mess.
I've been making a ton of food but I haven't been taking pictures like normal. My challenge is over on Saturday and I will be back into blogging more regularly then. Sorry for those who've been wondering where I've been. And now that I am working out so hard again, I am eating a TON more food. The past few days I've made...sundried flax crackers, onion bread, a key lime box of cheesecake bites, corn chips, almond mylk and tons of stuff in between
I will keep you posted about the outcome of the contest and hopefully get some pix up of the food I've been making!'s a cold raw loving day!!! Oh yea.,...I love to come home to a warm house and the smell of dehydrated goodness!

Gym Re-Initation and Menu

I've been having some Internet trouble. I can get on, but I haven't been able to effectively send/receive things. I took it as a time to step back from cyber world and make more connections in my real world :)

I'm back from the land of technical difficulty and am just reporting that I have been SO excited to be back in a gym!!!! I was getting a little bored working out at home, and when the high light in the basement blew out, I knew it was time to find a way to get out :) Thankfully in my town there's a $10/month gym. NO fancy classes or saunas, but it has all the equipment I've been dreaming about using.

I've been fueling myself on great eats lately. I have also been dehydrating away...this week I made......
Corn Chips
2 bags of 10 oz frozen organic corn
1/2 c water
chili powder
celtic sea salt

Process until very very smooth. Put on teflex sheet and dehydrate for 4 hours each side. You can even score them into tiny triangles after 2 hours and they will break in the shape of real corn chips.

I also made... Chia/Flax Dessert Crackers
I took a recipe inspired by the awesome chef Kristen and put my own little spin on it.
1 cup soaked chia seeds
1/2 c ground dark flax seeds
vanilla (alcohol free)
1/8 c agave nectar

Process and dehydrate. YUMMY!!!!!!!!!!

I also made....Sun Dried Tomato Flax Crackers (originally named Crunchy Flax Seed Crackers) by the recipe originators Heidi & Justin. I hope they won't mind if I give this one away. This recipe is soooooooooo easy and delicious. I even made tiny little square crackers to eat like croutons in my massive colorful salads!!

1 1/4 cup whole dark flax seeds
3/4 cup golden flax seeds
1 cup sun-dried tomatoes, soaked in 2 cups of water for 4-8 hours
up to 2 cups of purified water
Juice of 1 small lemon
1 teaspoon Nama Shoyu (optional) .... I used Braggs (1/2 tsp)
sea salt to taste

1. Grind 3/4 cup whole flax seeds in a coffee grinder.
2. Pulse flax seeds and lemon juice in a food processor with the S-blade
until well mixed. Tadd the tomatoes and Nama Shoyu, and pulse until
3. Turn the food processor off, and pour a ¼ cup of purified water into the
food processor. Pulse the mixture. Continue to add water in small ¼ cup
amounts until it appears to form into a slightly wet ball of dough. Add salt
if desired and pulse briefly to mix the salt into the mixture.
4. Pour 1/3 of the mixture onto a Teflex sheet. Form the mixture into a
round dough ball, then flatten onto the Teflex sheet. With a spatula, press
the mixture onto the Teflex Sheet. The trick is to make sure the mixture is
very thin, as thin as you can make it without it breaking apart. If you find
that it is breaking apart easily, put back in the food processor and add
more water.

I won't give anymore of their recipes away!! I highly suggest getting
5. With a dull knife or a spatula, score the crackers however you like. We
like to make some of them big squares (2 x 2 inches) and some small
squares (1x1 inch). You can even try to make different shapes including
triangles or rectangles, or possibly other shapes. Get creative! Repeat
steps 4 and 5 with the remaining mixture. All of the batter should fit
around 3 dehydrator trays.
6. Dehydrate at 118 degrees for 12 hours or overnight. You can remove
the Teflex sheets and flip once the tops of the crackers are dry. Place the
crackers with the moist side up onto the dehydrator tray and continue to
dehydrate at 118 degrees for another 24 hours, or until they are very dry
and crispy.
7. Store crackers in an air-tight container

I will not give away anymore of their recipes!! :P And although the holidays are over, I still highly suggest you pick up their Christmas recipe ebook. The recipes rock and I am still making them and the holidays are well over.

Well, at the gym, I have been really getting into the zone. I can't do that at home as much, b/c Kennedy is usually climbing on top of me or I am trying to hurry before she wakes up! It is great to be able to just focus solely on ME for an hour. It was so refreshing. Raising a kiddo with special needs is a wonderful thing, but it is easy to forget to put yourself first sometimes. I'm also using Tosca Reno's wonderful fitness book Eat Clean Workout Book . True it is really more informative for a woman really new to fitness, but I really really like it!!! Initially I thought I couldn't use some of it b/c I didn't belong to a gym, and now that I do, I can fully incorporate a lot of her suggested exercises into my workouts.

Here is my menu from Thursday
M1: 2 bananas preworkout
M2: post workout..grabbed fruit salad at the store. grapes/cantaloupe/honeydew
M3: salad (red leaf/olives/cherry tomatoes/avocado) corn chips
M4:1 orange and 3 power bars (see recipe below)
M5: green smoothie: kale/spinach/bananas/raspberries/hempseeds
M6: cucumber/lemon juice

I am calling these power bars, but they are really called Date Nut Thing-a-Ma-Jigs. You can find the recipe in Kristen's Raw Dessert ebook . This ebook rocks!!!!! Desserts are what are loved most by raw fooders (unless you are 80/10/10) I am not and I love desserts :) This ebook has a ton of simple/easy and very delicious desserts. I took the recipe and added hempseeds for protein and call them power bars...yum yum.

So I am feeling sore from my very serious, extra booty emphasis smith squats. I am planning to see if Kennedy will take a nap and soak my tired muscles in some Epsom salts!

The Awesome Raw Life

Living an awesome raw life. I am working out and feeling great. I have increased my green smoothie consumption and am buzzing as usual off of my overload of superfoods..yum yum yum.

Today I am making a Super Cherry Superfood Smoothie...

HUGE handful of spinach
frozen cherries
2 frozen bananas
1 tbsp coconut oil
1 tbsp cacao
1 tsp maca
1.5 c water (can use nut mylk)

Blend and Enjoy. I've been having that smoothie almost two times a day lately.

I am super happy to say that I rejoined a gym. It's really inexpensive per month and I will do my best to get there about 3-4 times a week. Other than that, I'll continue to workout at home in my cold basement gym. I love it there! U can usually find me in a snowsuit with mix-matched neon socks (seriously) with a hemp protein shake.

I have been extra introspective lately. Just journaling up a storm and letting all of my creativity flow onto the page. I've been taking my time with my days and relaxing a bit. Kennedy has been having a blast hanging out with me. We took "off" from Autism and have just been having a ton of fun!!!!!!!!!

Yummy eats and Workouts

Organic double chocolate cherry cheesecake

Leftovers! Today's lunch. Romaine roll ups with nut cheese/cherry tomatoes/olives

I was up for almost 24 hours yesterday! When my husband got up I am took a nap before my workout. No early workout for me today!! I was so exhausted. All the food/treats came out wonderfully! My macadamia cheese and sundried tomato flax crackers were so yummy topped with olives. And the organic cherry chocolate cheesecake was SOOOOO DELICIOUS!! I froze the rest in slices and will be enjoying it for quite some time!!

I have gotten request and so I will go back to listing my daily menu. I have been training hard with my weights so I have broken my meals up into the six a day recommended meals for keeping the metabolism revved up! I'm working on getting in even more wonderful green smoothies. I drink about one a day, but want to start having one later in the day from now on. I always feel so amazing after I drink them. And 2008 is all about greatness, energy, abundance and ecstatic being.....wonderful way to accomplish this is to vibrant on the higher frequency that drinking green brings.

M!: hot water with lemon (still full from eating at midnite!)
M2:green smoothie...froz peaches/spinach/banana 1quart full
M3:romaine roll ups with macadamia nut cheese/olives/tomatoes and sundried flax crackers
M4:smoothie/froz peaches/banana/hempseeds

M6: 1/2 quart of green smoothie

So today I did my chest/tris/shoulder a dreaded 20 minutes of SS cardio and cleaned my house.Therapy begins again tomorrow. I'm so excited about 2008, I am bubbling over with the thought of the possibilities that this year brings. I know that Kennedy will continue to grow and develop and defy the odds!

It's late and I am off to record my workout and go to bed. Trying to get up at 5 am to workout!! Be fit and eat raw!!!!!
